I understand the basic mechanics, like the mirror that allows you to see exactly what photo will be taken, but shouldn’t the digital display make that completely obsolete? Is the only reason dSLRS are better because they’re of a bigger design and are produced at a higher cost?

Short answer: They are high quality because the sensor is larger.
Longer answer: The larger sensor can gather more light than a smaller sensor. This inherently makes it higher quality. Another reason is due to the lenses. You can switch out the lens depending on the shot you need. Often times a lens can cost more that a standard digital camera. A lot of Research and Development dollars are spent to make the lenses the professionals use. Those lenses also have glass elements that must fall within a very tight specification. On a standard point and shot, that specification is much less tighter.

yap as the guy before said the sensor are way larger, that mean clearer picture with less noise. the lens are a better quality which means a sharper image, the on board processor ~ yede yada yada . . . you get the flow
-Bigger sensor’s can shoot at high iso with less noise
-No shutter lag highe fps and fast shutter speeds
-Better processor chip that converts the analog image to digital.
-Interchangeable lenes. the sky is the limit in this areana
-Ther are many reasons but these are the most relavant.
Just to add, Live View does not make the viewfinder obsolete. First, holding the camera out away from the photographer’s face is remarkably unstable, leading to heavy blurring. Second, there is still a slight, if even split second, delay for live view, while there is no delay viewing through the viewfinder, making shots that require quick reflexes easier rather than anticipating by a good second or two just to be sure.
And yes, everyone before me is correct – more versitile lenses, usually better quality lenses, larger sensor gives better quality of image and greater control of depth in field. Option for additional flashes that are stronger and capable of bounce-flashing for a larger light source and hence more appealing light for portraiture.
